Cajun Chicken Pasta
Cajun Chicken Pasta Recipe
Kung Pao Chicken
Kung Pao Chicken
Ingredients:
1lb boneless-skinless chicken breasts (cut into 1” pieces)
1 tablespoon cornstarch
2 teaspoons sesame oil
3 tablespoons green onions (chopped)
3 garlic cloves (minced)
½ teaspoon crushed red pepper flakes
½ teaspoon powdered ginger
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
2 teaspoons sugar
1/3 cup dry roasted peanuts
Step 1: combine chicken and cornstarch in a small bowl and toss to coat. Heat sesame oil in wok over medium heat, add chicken and stir fry 5-7 minutes or until no longer pink inside. Remove chicken from wok.
Step 2: Add green onions, garlic, red pepper flakes and powdered ginger to the wok and stir fry for 15 seconds.
Step 3: Combine vinegar, soy sauce and sugar in a small bowl. Mix well and add the sauce to the wok.
Step 4: Return chicken to the wok and coat with sauce. Stir in roasted peanuts. Heat thoroughly.
*Top with additional green onions if desired and serve over white or brown rice.
I also made some homemade wontons with a chili sauce and they were a great addition to this meal!

Chicken Pecan Salad
I Love A Chicken Salad Sandwich and I can't wait to try this recipe! It sounds so light and yummy!!
Chicken Pecan Salad
1 Tbsp. lemon juice
1/3 c. mayo
1/2 c. chopped celery
1/2 tsp. salt
2 c. chicken, chopped
1/4 c. toasted pecans, chopped
1/4 c. dried cranberries
Mix the mayo, lemon juice and salt. Add the rest of the ingredients and stir well.
Cinnamon Roll Cake..In the oven now!!
Cake:
3 c. flour
1/4 tsp.salt
1 c. sugar
4 tsp. baking powder
1 1/2 c. milk
2 eggs
2 tsp. vanilla
1/2 c. butter, melted
Topping:
1 c. butter, softened
1 c. brown sugar
2 Tbsp. flour
1 Tbsp. cinnamon
Mix everything together except for the butter. Slowly stir in the melted butter and pour into a greased 9x13 pan. For the topping, mix all the ingredients together until well combined. Drop evenly over the batter and swirl with a knife. Bake at 350 for 28-32 minutes.
Glaze:
2 c. powdered sugar
5 Tbsp. milk
1 tsp. vanilla
While warm drizzle the glaze over the cake.
